ASPARAGUS: BEYOND THE "SMELLY PEE"

Yes I know…. You eat these guys and your pee smells (and a pretty awful smell I’ll admit) however let’s look beyond the pee to see what health benefits these little green guys provide for us!

By adding these to your meal plan you’ll be providing your body with the following nutrients:

  • Fibre

  • Calcium

  • Iron

  • Magnesium

  • Phosphorus

  • Potassium

  • Sodium

  • Zinc

  • Copper

  • Manganese

  • Vitamin C

  • Vitamin B1, 2,3 &6

  • Vitamin E

They also contain phytochemicals such as beta-carotene and chlorophyll (among others). Fresh asparagus has high amounts of folic acid, nucleic acid and histones that help to support our immune system; they are a diuretic and help to regulate glandular disorders and kidney dysfunction.

When purchasing asparagus look for bright green colored spears that are firm; the tips should be compact with a slight purplish tone to them. The best way to store them is to either cut an inch off the end and wrap in a moist paper towel before putting in the refrigerator or after trimmed stand upright in a container with about a ¼ inch of water; they will stay well in the fridge for about three days.

Asparagus is great on its own, steamed or roasted with a little butter and garlic, added to a favourite salad or in many great recipes like the ones found here
