Preheat oven to 400 F. Lightly oil 10 muffin cups.
In a large bowl, mix the flour, baking soda, cinnamon, and ground flaxseed. In a medium bowl, beat the egg and butter. Then add the cranberry juice, apple juice concentrate, applesauce, and coconut, and mix until well blended. Add the wet ingredients to the dry all at once, stirring just until the mixture is moistened. Don’t over beat or the muffins will be tough. Spoon the batter into the muffin cups, filling each two-thirds full.
Bake for 30 mins. or until the tops are lightly brown. The insides of the muffins will be slightly moist because of the applesauce
