A SUPER EASY BUT OH SO DELICIOUS MIXED VEGGIE SOUP!
I was feeling the good old Winter chill the other day, that chill that seems to settle deep inside you and no matter what you do you just can't seem to warm up! When these "chill days" hit me I always crave a big bowl of soup! So I declared it a soup making kind of a day......
But I was pretty low on fresh veggies and the last thing I wanted to do was head out in the cold so I used up what I had on hand and the outcome was surprisingly DELICIOUS!
Here's what I had on hand
Broccoli
Brussels Sprouts
Green Onion
Celery
Organic Vegetable Broth
Fresh Garlic
Fresh Ginger
Herbamare Zesty Sea Salt
Fresh Ground Black Pepper
Turmeric
Wheat Semolina noodles
Here's how simple this soup was to create
Bring 2.5 cups of water to a boil
Add in about 8-10 fresh Brussels Sprouts (washed and cut)
Add in fresh broccoli (washed and cut) about 1 cup
Add in about 5 green onions (washed and sliced)
Add in about 4-5 celery stalks (washed and sliced)
Grind and add 1 clove of garlic
Grind and add 1 piece of ginger (I used about a 1 inch piece of fresh ginger)
Allow to boil for about 10 minutes, reduce to medium heat for about 20 minutes
Add 2 cups of organic vegetable broth, noodles, 1/2 tsp. of Herbamare zesty sea salt, some black pepper and turmeric
Reduce to low heat for about 30 minutes and enjoy!
This soup was so tasty that I ended up eating 3 bowls of it throughout the day!
And besides being super delicious.....IT WARMED ME UP :)
