THE OFTEN OVERLOOKED APRICOT


Apricots have been a fruit of choice for many people for years to help with things such as constipation, cancer and bowel disorders. Studies of the Japanese apricot found that consumption can help with GERD (gastroesophageal reflux disease). It is cautioned, however that the pit should not be eaten because it contains Latrile (also called B17) which contains cyanide and can be fatal in large amounts.

Apricots will provide you with the following nutrients:

  • Fiber

  • Vitamin C

  • Calcium

  • Magnesium

  • Vitamin B’s (B1,2,3)

  • Phosphorus

  • Folate

  • Copper

  • Iron

  • Manganese

When purchasing apricots choose ones that you can gently press on the skin without denting and that give off a nice aroma. Ripe apricots will keep in a plastic bag in the refrigerator for a day or two; wash when ready to consume. If not quite ripe enough store them at room temperature in a paper bag and they will ripen nicely. It’s easiest to remove the skin if you blanch them first (place in boiling water for 15-20 seconds).
