I love carrots! I love the crunch, the taste and all of the goodness they have to offer. I love them raw as a snack or added to a salad, I love them roasted as a side to any dish... and oh yeah I love carrot soup hot or cold!

So you get it.... I love carrots and here's why beyond the delicious taste!

There have been many epidemiological studies that have concluded that the regular consumption of beta-carotene might reduce the risk of developing cancer; carrots are one of the best dietary sources of beta-carotene so be sure to incorporate more into your meal planning!

Carrots will also provide you with the following important nutrients:

And they contain the following important phytochemicals:

  • alpha-carotene

  • beta-carotene

  • lutein

  • tocopherols

  • apigenin

  • beta-ionone

  • chlorophyll

  • ….among others

Consuming more of these delicious guys may offer you the following benefits:

  • stimulating the production of T-helper cells (immune cells that help keep us free from infection)

  • offering cardio-vascular support

  • reducing inflammation

  • slowing down the aging process

  • helping to build healthy skin, tissue and teeth

  • stimulating the appetite

Carrots are also great for making soups and juices that can be helpful for the following:

When purchasing carrots choose ones that have a deep color, the deeper the color the higher the beta-carotene content. They should be medium size and slender, avoid one’s that have very dark or black rims around the top.

Carrots store well, they will keep in their original packaging for approximately 4 weeks. Loose carrots are best stored in a closed plastic bag unwashed until ready to prepare.
