I recently completed a Nutritional Assessment with a client and she was asking me about Bok Choy. She had recently been introduced to it but because she didn’t know a lot about the nutritional value she wasn’t sure about adding it into her meal planning. My answer to her was “heck yeah add more Bok Choy!” and here’s why:

Bok Choy is a great source of the following vitamins and minerals:

  • Vitamin A

  • Vitamin C

  • Vitamin K

  • Calcium

  • Magnesium

  • Potassium

  • Manganese

  • Iron

Bok Choy has been cultivated in China for centuries but it has become increasingly popular among North Americans which is a very good thing considering the “nutritional punch” it delivers!

It looks like a cross between Romaine Lettuce and Celery but it is actually a member of the Cabbage family and is sometimes referred to as White Cabbage. You can enjoy the entire vegetable either raw in a salad (it gives a great “crunch” to salads), chopped as an addition to a great soup recipe (the stalks will take longer to cook so add them first) , steamed or as an amazing addition to your favourite stir-fry.

Bok Choy is best kept refrigerated in a loosely sealed plastic bag and is best enjoyed ASAP as it is more perishable then other forms of cabbages.

If you've never tried this "lettuce/celery looking cabbage" add it to your grocery list and give it a try.... chances are you'll LOVE it and I know your body will say "thanks" for all the nutritional goodness it has to offer!
