HOMEMADE MAYONNAISE


This mayonnaise recipe is a great alternative to your "go to" store bought variety that has a bunch of added sugar and preservatives; and it's so easy to make you can "whip" it up in no time at all. And, as far as I'm concerned, it tastes much better!

1 whole egg

1 – 1¼ cups extra virgin olive oil

1 tbsp. fresh lemon juice

¼ tsp. dry mustard powder

salt and pepper to taste

honey to flavour (optional)

Process egg, lemon juice and mustart in the blender or processor for a few seconds. While the machine is running, add the oil in a fine stream. Do not add oil quickly; it should take at least 60 seconds.

As the mayonnaise thickens, the sound of the machine will deepen.

Use right away

Note: This recipe may be made in a blender or in a food processor. If made in a processor the recipe can be doubled. However, the recipe cannot be doubled if made in a blender, as it will not thicken properly.
